Introduction:

Ingredients:
- Oil – 2 to 3 tbsp
- Mustard Seeds – 1 tsp
- Cumin Seeds – 1 tsp
- Medium Onion – 1, finely chopped
- Tomatoes – 250 g (3 chopped, rest pureed)
- Ginger-Garlic Paste – 1 tsp
- Turmeric – ½ tsp
- Salt – as needed
- Red Chili Powder – 2 tsp (adjust to taste)
- Coriander Powder – 1 tsp
- Green Chilies – 4, slit
- Curry Leaves – 2 tbsp
- Kasuri Methi – 1 tsp, crushed
- Maggi Masala – a pinch
- Chopped Coriander – few tsp for garnish
Step-by-Step Instructions:
- Prep: Chop onion and 3 tomatoes; grind the remaining tomatoes into a puree.
- Temper Spices: Heat oil, add mustard and cumin seeds. Let them splutter.
- Sauté Onions: Add onions and fry till golden.
- Add Paste: Mix in ginger-garlic paste and fry till raw smell disappears.
- Tomatoes In: Add chopped tomatoes + puree. Cover and cook until mushy.
- Add Spices: Add turmeric, salt, red chili, coriander powder and cook till oil separates.
- Flavor Boost: Add green chilies, curry leaves, little water and simmer.
- Finishing Touch: Crush kasuri methi into the curry.
- Final Mix: Add Maggi masala and coriander. Stir well and turn off heat.
